We will teach you all we know about pizza and make a master pizza maker out of you. Not only does the class cover all the arts of pizza making, but is specifically tailored to the students’ needs and wants. In other words, we help you develop your own custom pizza menu with all the recipes and standard practices. Our approach is one on one training in a live restaurant environment. It’s all about doing it and getting it right. When our students complete our course, they can make any style pizza and know exactly how to train others to do the same. They are also getting insight, training, and tools to manage the concept on the operations side of things with an introduction to business management tools.
Dough Master: Our students learn all the fundamentals of dough making daily. We have comprehensive work books that allow our students to grasp the basics and truly learn how to make great products. These fundamental are explained and demonstrated every day. Our students make the dough from our standard recipe from start to finish. The student rolls the dough, ensures the quality of the dough, and understands all the principles regarding making perfect products. This is the basic fundamental of pizza. When the student understands and masters these skills, he will never have to worry about perfect dough making again. The student also gets a training guide on how to make perfect dough every day!
Our students learn how to open the dough and make various sizes of pizza. The student will work at opening and stretching dough throughout the day. This is a technique that we will have you mastering within several days. It’s about repetitive training and you can practice as much as needed. We also teach our students how to make incredible brick oven breads from the same dough recipe. The training is one on one with a master trainer who ensures the student is doing a good job while building confidence and ability. Basically every day you make all the dough and manage the whole system. This will be done consecutively for all the days of training and at the same time you will be learning all the other skills and recipes.
You will make a thousand dough balls, Fresh bread daily, some of the best bread you ever tasted. After day one you will make all the dough and breads without instructions.
· Gourmet Sauce preparation: We will teach and review all the sauce making procedures for standard pizza and gourmet sauces. These sauces such as Vodka sauce, Porcini mushroom sauce, Cheddar Scallion sauces, Seafood and tomato based sauces will allow you to make incredible products for your restaurant. All recipes and techniques will be practiced and mastered. Recipes will be provided. You will open all cans, prepare all ingredients, and mix all sauces. You will cook and taste sauces daily, some of the best sauces you will ever have! These sauces and cooking techniques will allow you to create some of the greatest gourmet pizzas including our International World’s Best Winners. These basics are explained and demonstrated daily. We teach with time and temperature charts, exact recipes so that you make the perfect dough every time. These charts are for you to use in your own store so that you can teach others the exact science of dough making.

This is a very intense training program. Our students leave with complete knowledge of how to make dough, sauce and incredible pizza while understand all the basic principles regarding it. We will also be able to answer any of the questions you may have regarding the industry. We not only teach the art of pizza at our school but we also consult on all concepts from menu development, store design, and equipment specifications.
When it comes to learning the art, we train all our students in a professional manner and guarantee they will be able to produce perfect pizzas upon completion. The atmosphere is fun, hard working, and professional.
Step by step photos recipes and training materials are all part of the training.
Classes are from 10:00 to 5:00 and longer as your training progress. Our goal is to have you producing perfect pizza every time, working by yourself at our pizza station on several busy shifts by trainings completion. You will cook live during our dinner rushes as you progress!
